Vegan Peanut Butter Chocolate Chunk Cookies
What do you do when you get home at 8 o’clock at night with a serious hankering for a cookie but there’s no dessert anywhere in sight? I’ll tell you what you do.. you grab a bowl, 5 ingredients (okay.. you caught me.. it’s 6 if we count salt, but really who counts salt?!?), and make some darn good cookies! And then you try to wait patiently while they cool only to cave and eat one too soon, burn your entire esophagus as it goes down and wail in pain as your boyfriend tells you “I told you so!” Not that that happened to me or anything…
Okay, you got me. That totally happened. And it was worth it. Because then I was able to taste test another cookie since the first one burned my insides and I couldn’t truly taste the flavor completely (at least that’s what I told myself). My second cookie was pure bliss. I took a bite, into the cookie and closed my eyes as I experienced my first cookie in months. These cookies completely satisfied my cookie craving. They are slightly sweet, dense and ooey gooey from all the chocolate. What more could you want in a cookie? Oh yeah, that quick prep and cook time doesn’t hurt.
Next time you have a cookie craving, don’t reach for those Oreos… make these vegan peanut butter chocolate chunk cookies (bet you can’t say that with a cookie in your mouth). Your cookie craving will be satisfied in under 20 minutes, that is.. if you can practice more self control than I did and wait until they finish cooling!
Flourless Peanut Butter Chocolate Chunk Cookies
- 1 1/2 cup natural peanut butter (only ingredient should be peanuts!)
- 1/2 cup honey (or maple syrup if strict vegan)
- 1/2 cup vegan chocolate chunks or cacao nibs (I use Endangered Species brand chocolate and chop it into chunks)
- 1 cup gluten-free rolled oats
- 1 tsp vanilla extract
- 1 tsp salt
- Preheat oven to 350F.
- In a large bowl, mix together ingredients until well combined. Spoon tablespoon sized pieces of dough onto a baking sheet lined with a silpat or parchment paper.
- Take a fork and lightly press down on each ball of dough to flatten is slightly.
- Bake for 9-11 minutes, until lightly browned. Remove from the oven and allow to cool completely.
Oh! I am so going to try this soon! I love trying new vegan recipes.

Thanks Ginger! I hope you like them! 🙂
So close to being able to eat these! Looks great!
Hahah I had a feeling there would be something in here you couldn’t do! Is it the oats or the honey?
What kind of oats? Rolled, steel cut, something else?
Hi Geri! They’re rolled oats. I’ve updated the recipe to include that detail. Thanks for pointing it out!
Oh man, I know some people that would love me if I made these.
Let me know if you do! They’re so good! Especially for being so simple! They’ll think you slaved away forever making cookies 🙂
Please someone make these for me! They look amazing!
Yum! These sound so amazing and easy. I’m vegan, so I will most definitely be making these!
I LOVE that I seriously always have these ingredients on hand. Totally gonna whip some of these cookies up ASAP.

Thank you Julie! I hope you enjoy them! Also… pumpkin version is definitely going to have to happen this fall! Stay tuned 🙂
I’m glad to have found this. I love to bake and bring things in to work. One of my coworkers has a severe gluten allergy so she doesn’t get to partake of my goodies very often. I’ll have to try these!
Thanks Anna! That is so nice of you to bring in treats for your coworkers! I hope your coworker with the gluten allergy enjoys these! I loved them and my gluten-loving boyfriend also did too! So they’re perfect for people with and without allergies 🙂
I’ve saved this recipe and am going to try it this week! I LOVE peanut butter and I love that this recipe is so clean!
Thanks Melissa! The less ingredients, the happier I am 🙂
I’ve attempted a similar recipe but will try this one next time because they’re amazing!

Thanks Jess! Do let me know how they turn out! They’re favorites in my house!
Megan, These cookies look to die for! I want to try them with the maple syrup! Curious if they get crumbly cause I love crumbly 🙂
Thanks Lara! They do get a little crumbly when you bite into them but they don’t fall apart (which is good in my book!) – enjoy! 🙂
OMG that looks delicious and seem simple enough that I think I can make it! Your photography is spot on. I can’t wait to try this.
Ah thank you so much! This made my day!
I really need to be on the treadmill right now and instead I’m debating on making cookies because my thunder thighs want to be bigger than life. LOL. 🙂
hahaha Sara this made me laugh so hard! The good thing is these cookies aren’t that bad for you… I meannnn there could be worse things right? lol
Best PB cookies I’ve made.
Yay!! Thank you so much! I’m so glad you liked them. Now I need to go make some more since you reminded me about this recipe!
Thanks for this delicious recipe! I found this because I’m out of eggs and couldn’t make my favs, and then realized I’m out of honey also (apparently I need to go shopping!). I subbed with sugar mixed with water. Worked perfectly, they are so good!
Yay! So glad you enjoyed them! I love that even though you were out of ingredients you could still make cookies!!
