I scream. YOU scream. We ALL scream… for NICE CREAM?
I have officially hopped on the nice cream train. I’m well aware that I’m about a year or so late to this nice cream party but I’m alright with that. Some of you may be wondering, what in the world is nice cream?
Well, it’s basically just blended frozen bananas that have magical powers and taste similar to ice cream. No added sugar or preservatives – hence the “nice” part of the name.
I had been on a year long “no banana”diet – aka my low sugar diet including all forms of fruit. So nice cream just wasn’t on my radar since it wasn’t something I could indulge in.
Even now, bananas are a bit higher sugar than my stomach can tolerate on a regular basis, but every now in then some banana nice cream does the mind good.
The great thing about this ice cream is that you really only need one ingredient.. and that’s frozen bananas. Beyond that, you can really add any mix ins or ingredients that you want.
I found that adding peanut butter or another nut butter provided some good fat that helped the banana ice cream get really smooth and SUPER creamy. And the vegan chocolate chunks? Well those were just because they’re delicious.
I honestly couldn’t believe that it only took 3 ingredients to make this vegan banana chocolate chunk ice cream that tasted so delicious and felt SOOO indulgent! I really felt like I was eating something that I shouldn’t be full of dairy, eggs and sugar.
But nope, just eating my healthy (ish) banana ice cream! It was so easy to make in fact, that I even made this nifty video for you guys to show you that this dessert is totally doable and should always be kept in your freezer. At least, that’s what I do 😉
Vegan Banana Chocolate Chunk Ice Cream
Ingredients
- 3 ripe bananas (sliced into 1 inch pieces)
- 1/4 cup peanut butter
- 1/2 cup vegan chocolate chunks
Instructions
- Line a baking sheet with parchment or wax paper. Place banana slices on the baking sheet. Freeze for 2-3 hours until frozen.
- Add frozen bananas to a food processor. Spoon in the peanut butter. Process 5-10 minutes, until completely smooth.
- Stir in the chocolate chunks. Freeze for 1-4 hours, until ice cream is firm. Defrost for 5-10 minutes before serving.
