Flourless peanut butter chocolate chunk cookies are so easy to make you will find yourself making them at all hours of the day. 5 ingredients and only 15 minutes is all that stands between you and delicious fresh baked cookies! Gluten-free, dairy-free and vegan.
1 1/2cupnatural peanut butter(only ingredient should be peanuts!)
1/2cuphoney(or maple syrup if strict vegan)
1/2cupvegan chocolate chunks or cacao nibs(I use Endangered Species brand chocolate and chop it into chunks)
1cupgluten-free rolled oats
1tspvanilla extract
1tspsalt
Instructions
Preheat oven to 350F.
In a large bowl, mix together ingredients until well combined. Spoon tablespoon sized pieces of dough onto a baking sheet lined with a silpat or parchment paper.
Take a fork and lightly press down on each ball of dough to flatten is slightly.
Bake for 9-11 minutes, until lightly browned. Remove from the oven and allow to cool completely.
