White Chocolate Cranberry Oatmeal Cookies

These white chocolate cranberry oatmeal cookies are super chewy, lightly spiced with cinnamon, and loaded with white chocolate and cranberries. What else could you want in a gluten free cookie?

Ingredients

  • 1 1/2 cups gluten free flour blend
  • 1/2 tsp xanthan gum (if your blend doesn't already contain it)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup unsalted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups gluten free certified oats
  • 1 cup white chocolate chips
  • 1 1/2 cups dried cranberries

Instructions

  • Preheat oven to 350F.
  • In a bowl, combine flour, xanthan gum (if using), baking soda, salt and cinnamon. Set aside.
  • In a large bowl, beat together sugars and butter until creamed and smooth.
  • Then, add in the egg and vanilla, and mix until combined.
  • Stir in oats, chocolate chips, and cranberries until fully incorporated.
  • Spoon rounded tablespoons of dough onto an ungreased cookie sheet.
  • Bake 10-12 minutes at 350F. Cool on baking sheet for 1-2 minutes before transferring to wire racks to finish cooling.
