Avocado Ice Cream

This avocado ice creamy is extra creamy from the avocado in this recipe. If you haven't tried avocado ice cream before, you're in for a treat! It's gluten free, too!

Ingredients

  • 2 ripe avocados (peeled and pit removed)
  • 1 1/2 cups whole milk
  • 1/2 tbsp pure vanilla extract
  • 3/4 cup sugar
  • 1 tbsp vodka (optional (just helps the ice cream stay softer))

Instructions

  • Scoop out the avocado flesh with a spoon and place the avocado flesh, milk, sugar, vanilla and vodka in the food processor.
  • Pulse until the avocado is smooth and the ingredients are combined.
  • Pour the ice cream mixture into an ice cream machine and freeze according to the manufacturer's instructions.
  • It should take about 25 minutes to freeze.
  • Scoop ice cream into a freezer safe container and place in the freezer for 2 hours, or until ready to serve.
  • Thaw at room temperature for about 5 or so minutes before serving. Makes about 1 quart.
