Chicken Taco Lettuce Wraps

These chicken taco lettuce wraps make an easy, quick lunch or dinner for the whole family. Just marinate your chicken ahead of time to have an easy meal on the table in under 20 minutes! Perfect for busy days. Top with your favorite toppings, such as avocado, red onion, cilantro, sour cream, and cheddar cheese!

Ingredients

For the chicken:

  • 1 lb boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil - or avocado oil
  • 1 tablespoon lime juice
  • 1/2 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper

For the taco lettuce wraps:

  • 12 count boston bibb lettuce - or butter lettuce
  • 1 cup avocado - diced
  • 3/4 cup grated cheddar cheese
  • 1/2 cup red onion - diced small
  • 1/2 cup sour cream
  • 1/2 cup roma tomato - diced
  • 1/4 cup cilantro

Instructions

For the chicken:

  • Place the chicken between two sheets of parchment paper. Lightly pound with a meat mallet or rolling pin until the chicken is an even 1/2 inch thickness.
  • Add the pounded chicken to a large bowl or gallon zip-top bag.
  • Add the olive oil, lime juice, chili powder, salt, garlic powder, cumin, paprika, and ground black pepper to the bowl. Stir until the chicken is completely covered with the marinade. Let marinate for 30 minutes in the refrigerator.
  • Once the chicken is marinaded, preheat a cast iron skillet over medium heat.
  • Add the chicken to the pan and cook for 7-8 minutes until golden, flip, cook another 7-8 minutes, or until it reaches an internal temperature of 165. Remove from the pan and let cool briefly.
  • Once cooled, dice the chicken.

For the chicken taco lettuce wraps:

  • To assemble, place the lettuce on a plate.
  • Fill with the diced chicken.
  • Top with red onion, cilantro, sour cream, shredded cheese, tomatoes and avocado.
  • Serve immediately.
