Instructions

  • Add the quartered 16 oz (453 g) fresh strawberries, 2 cups (453 g) plain full-fat Greek yogurt, and 2 tablespoons (42 g) honey to a blender or food processor.
  • Process for 1-2 minutes until completely smooth. Taste and add more honey if your strawberries aren't very sweet.
  • Pour the mixture into popsicle molds, leaving a small gap at the top since the mixture will expand slightly as it freezes.
  • Insert the popsicle sticks and place the lid on top.
  • Freeze for at least 4 hours, or until completely solid.
  • To unmold, run the outside of the mold under warm water for about 10 seconds. The popsicles should slide right out.

Notes

  • Fresh or frozen strawberries: Fresh ripe strawberries give the best flavor, but frozen work too. No need to thaw them first, but you may need a high-powered blender to process them.
  • Dairy-free option: Use your favorite dairy-free Greek-style yogurt in place of the Greek yogurt. Full-fat coconut milk (2 cups) also works and I've tested it.
  • Vegan option: Use dairy-free yogurt and swap the honey for agave syrup.
  • Storage: Popsicles keep in the freezer for up to 2 weeks. After that, they can start to get freezer burn. Keep them in the mold until you're ready to eat for the freshest flavor.
