Creamy homemade strawberry popsicles made with just 3 ingredients. Fresh strawberries, Greek yogurt, and honey are blended together and frozen for a refreshing treat that kids and adults both love. Five minutes of prep and no cooking. I make these all summer long.
16oz(453g)fresh strawberries - hulled and quartered, about 3 cups
2cups(453g)plain full-fat Greek yogurt - from a 16oz container
2tablespoons(42g)honey

Instructions
Add the quartered 16 oz(453g) fresh strawberries, 2 cups(453g) plain full-fat Greek yogurt, and 2 tablespoons(42g) honey to a blender or food processor.
Process for 1-2 minutes until completely smooth. Taste and add more honey if your strawberries aren't very sweet.
Pour the mixture into popsicle molds, leaving a small gap at the top since the mixture will expand slightly as it freezes.
Insert the popsicle sticks and place the lid on top.
Freeze for at least 4 hours, or until completely solid.
To unmold, run the outside of the mold under warm water for about 10 seconds. The popsicles should slide right out.
Notes
Fresh or frozen strawberries: Fresh ripe strawberries give the best flavor, but frozen work too. No need to thaw them first, but you may need a high-powered blender to process them.
Dairy-free option: Use your favorite dairy-free Greek-style yogurt in place of the Greek yogurt. Full-fat coconut milk (2 cups) also works and I've tested it.
Vegan option: Use dairy-free yogurt and swap the honey for agave syrup.
Storage: Popsicles keep in the freezer for up to 2 weeks. After that, they can start to get freezer burn. Keep them in the mold until you're ready to eat for the freshest flavor.
