Instructions

  • Add 11 cups (340 g) gluten-free Rice Chex cereal to a large bowl and set aside.
  • In a microwave-safe bowl, combine 2 cups (360 g) semi-sweet chocolate chips, ¾ cup (194 g) creamy peanut butter, and ½ cup (113 g) unsalted butter. Microwave in 30-second increments, stirring between each, until fully melted and smooth, about 1 minute total.
  • Pour the chocolate mixture over the cereal. Stir gently with a spatula until the cereal is evenly coated.
  • Transfer the coated cereal to a large zip-top bag or an airtight container with a lid. Add 2½ cups (300 g) powdered sugar. Seal and shake until the cereal is fully coated. If chocolate is still showing through, add up to an additional ½ cup (60g) powdered sugar and shake again.
  • Refrigerate for at least 1 hour before serving.

Notes

  • Gluten-Free: Make sure to use Rice Chex specifically, as it's the variety General Mills labels as gluten-free. Other Chex varieties are not all gluten-free, so check the box before you buy.
  • Dairy-Free: Use dairy-free chocolate chips and vegan butter like Earth Balance. Enjoy Life and Guittard both make dairy-free chocolate chips that work well here.
  • Storage: Store in an airtight container at room temperature for up to 5 days, in the refrigerator for up to 2 weeks, or freeze for up to 2 months.
