Apple Cider Mimosa
This apple cider mimosa is a fizzy fall cocktail made with fresh thyme, sliced apple, and Prosecco. It's sweet, a little herby, and easy to make for a crowd.

Combine the apple cider, thyme sprigs, and sliced apple in a pitcher. Refrigerate for at least 1 hour.
Fill champagne flutes halfway full with apple cider mixture.
Top off each glass with Processo.
Garnish with fresh thyme sprigs and a few of the soaked apple slices. Serve immediately.
Make-Ahead Note: The cider mixture can be made up to a day ahead and kept in the fridge. Add the Prosecco right before serving.
