These gluten-free raspberry white chocolate blondies are perfect as a special treat. The combination of sweet white chocolate, tart raspberries, and some bright lemon zest creates a unique flavor that's so delicious. They're easy to prepare and on the table in under 1 hour!

Let's make gluten-free white chocolate raspberry blondies! Gather your ingredients.

Add the raspberries and 1 tablespoon of gluten-free flour into a small bowl.

Toss until the raspberries are coated in the flour. Set aside.

Add the remaining gluten-free flour, cornstarch, baking soda, and salt to a bowl. Whisk together.

In a separate large bowl, add the melted butter, granulated sugar, and brown sugar together.

Mix for 1-2 minutes, until the mixture is combined.

Add the egg, egg yolk, vanilla extract and lemon zest.

Mix until smooth.

Gradually add the dry ingredients to the wet ingredients.

Stir until no more streaks of flour remain.

Stir in the chocolate chips until evenly distributed.

Then, add the floured raspberries to the mixture.

Gently fold the raspberries into the batter, being careful not to break them.

Add the blondie batter to a prepared 8×8-inch baking pan.

Spread the batter to the edges of the pan with an offset spatula.

Bake for 26-30 minutes, until the blondies are golden brown and the center no longer looks shiny.

Let the blondies cool completely before slicing into pieces and serving.
