Ingredients

  • 1 cup unsalted butter (at room temperature)
  • 3/4 cup light brown sugar (packed)
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 2 1/3 cups gluten free flour blend
  • 1/2 tsp xanthan gum (if your blend doesn't already contain it)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup coarsely chopped macadamia nuts
  • 1 1/2 cup white chocolate chips

Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • In the bowl of a stand mixer fixed with the paddle attachment, combine butter, sugars, and vanilla extract.
  • Blend until creamed together.
  • Blend in the eggs, one by one.
  • Gradually add in flour, salt, and baking soda.
  • Mix together until dry ingredients are completely incorporated.
  • Stir in macadamia nuts and white chocolate chips.
  • Line a baking sheet with parchment paper.
  • Drop teaspoon sized rounds of cookie batter onto the baking sheet and bake for 8-10 minutes.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack. Store in an airtight container.
