Gluten Free Mini Cinnamon Muffins

Mini cinnamon muffins are rolled in cinnamon sugar after baking for the ultimate breakfast treat. Bet you can't have just one!

For the Muffins:

  • 1 1/2 cups gluten free flour blend
  • 1/2 tsp xanthan gum if your blend doesn't already contain it
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 egg slightly beaten
  • 1/2 cup milk
  • 1/3 cup butter melted

For the Topping:

  • 2 tbsp sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup butter melted


  • Preheat oven to 400F.
  • In a large bowl, combine flour, sugar, baking powder, salt, nutmeg, and allspice. Set aside.
  • In a small bowl, combine the egg, milk and butter and mix well.
  • Add mixture into the dry ingredients.
  • Stir until they are just combined.
  • Spoon the batter into lined or greased muffin tin.
  • Bake at 400F for 12-14 minutes or until a toothpick comes out clean when inserted in the center of the muffin.
  • For the topping, combine sugar and cinnamon in a small bowl and mix well.
  • After the muffins are cooled, brush tops of muffins with melted margarine and sprinkle muffins liberally with cinnamon sugar.
