Preheat oven to 350 F.
Combine the nutella, peanut butter and sugar in a large bowl and mix until combined.
Stir in the egg and vanilla extract.
Then gradually add in the gluten free flour blend and xanthan gum (if using) and stir until no more white streaks remain.
If your batter is really crumbly, add a tablespoon of water or milk to make it come together better.
Form 1 inch balls and place on a greased cookie sheet.
Lightly press down on each ball so it flattens out a bit.
Bake at 350F for 7-8 minutes or until set.
Cool on a wire rack.
