Gluten-Free Pita Pizza

This classic gluten-free pita pizza is a great lunch option or an easy weeknight meal. You can even slice it up and serve it as an appetizer! This version is easily made gluten free using a gluten free pita!

Ingredients

  • 4 gluten-free pita bread
  • 2 tablespoons olive oil
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 cup marinara sauce
  • 12 oz fresh mozzarella (cubed, about 1 1/2 cups total)

For Topping:

  • fresh basil
  • pinch of sea salt
  • pinch of freshly cracked black pepper
  • pinch of red pepper flakes

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Place pita bread on a baking sheet. You may need 2 baking sheets to fit all 4 pita.
  • In a small bowl, combine olive oil and spices.
  • With a pastry brush spread oil mixture onto the pita bread.
  • Spread marinara sauce on the pita bread, leaving 1/2 inch border along the edges.
  • Add mozzarella cubes to the pita, spacing them out equally.
  • Bake in oven at 400F for 10-15 minutes, or until the edges of the pita bread are brown and the cheese is bubbling. Remove from the oven.
  • Top with basil, salt, pepper, and red pepper flakes. Cool for 2 minutes before cutting with a large knife or pizza cutter.

Notes

  • If you use frozen pita bread, you do not need to thaw it before using. It will take closer to the 15 minutes to bake in the oven. If you use fresh pita bread, start checking at 8 minutes.
