Sweet Potato Apple Sausage Breakfast Hash

This sweet potato apple sausage breakfast hash tastes just like fall. Full of sweet potatoes, crisp apples, onion, bell peppers and fresh herbs, this is one gluten-free breakfast you do not want to miss. Gluten-free and dairy-free.

Ingredients

  • 2 cups sweet potato (diced (about 1 large sweet potato))
  • 1 cup red potatoes (diced (about 2 small red potatoes))
  • 1 1/2 green apple (diced (about 1 large granny smith apple))
  • 1 cup white or yellow onion (diced (About 1/2 large onion))
  • 1/2 cup bell pepper (diced (about 1 bell pepper))
  • 2 tbsp fresh rosemary (copped)
  • 2 pre-cooked chicken sausage (diced (I used Aidells chicken apple sausage))
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp ground black pepper (or to taste)
  • 1 tbsp olive oil or avocado oil

Instructions

  • In a large skillet, heat olive oil. Add onions and bell peppers to the skillet and cook 5 or so minutes, until starting to soften.
  • Add sweet potatoes, red potatoes and sausage and cook until sweet potatoes are starting to get soft, at least 10 minutes, and the sausage is browning on the outside (remember they are already cooked!).
  • Stir in apples and cook for 3-4 minutes, until apples are starting to soften but still have a little bit of bite to them.
  • Mix in salt, pepper and fresh rosemary.
  • Serve immediately.
