Add the freeze-dried strawberries to a food processor.

Process until the dried strawberries are a fine powder.

Set aside 2 tablespoons of the powder for topping and the rest will be used for the filling.

Add the white chocolate chips and butter to a large bowl. Set aside.

Heat the heavy cream in a saucepan over low heat until the cream simmers. Do not boil.

Pour the cream over the white chocolate chips and let sit for a few minutes. Add the vanilla.

Stir until the white chocolate and cream mixture is smooth.

Add all but two tablespoons of the freeze-dried strawberry powder to the white chocolate mixture.

Stir until combined and smooth.

Chill the strawberry chocolate mixture in the refrigerator for 2-3 hours, until firm.

Use a tablespoon-sized ice cream scoop to portion out the strawberry truffle dough.

Roll the strawberry mixture into balls and place on a parchment lined baking sheet.

Chill for an additional hour.

Place the remaining white chocolate chips and coconut oil in a microwave-safe bowl.

Microwave at 50% in 30-second increments, stirring in between, until the white chocolate is melted.

Use a fork to dip the strawberry truffles into the white chocolate. Tap off excess white chocolate.

Immediately sprinkle the truffles with remaining strawberry powder.

Let the chocolate set completely before serving. Enjoy!
