These peanut butter cup cookies are stuffed with mini Reese’s peanut butter cups and topped with a few M&Ms for a cookie that is rich, chewy and crunchy. They’re perfect for birthday parties, Christmas cookie swaps, or a fun baking day with the family.

Let's make peanut butter cookie cups together! Gather your ingredients.

In a medium bowl, add together the flour, baking soda, and salt.

Whisk to combine.

In a separate large bowl, add the room temperature butter, brown sugar, and granulated sugar.

Cream together until light and fluffy.

Add the egg and vanilla extract.

Mix until smooth.

Gradually add the dry ingredients to the wet mixture.

Mix until just combined, until no more streaks of flour remain.

Add the mini chocolate chips to the cookie dough.

Mix until evenly distributed.

Use a cookie scoop to uniformly scoop the cookie dough.

Place the cookie dough balls into a mini muffin tin lined with paper liners.

Bake the cookie cups in the oven until lightly browned. Do not overbake.

Immediately press the mini peanut butter cups into the cookie cups.

The chocolate will start to melt from the heat of the cookies.

Once the chocolate is melted, add a few M&Ms to the top of each cookie cup.

Let the cookies cool completely before removing from  the muffin pan.
