gluten-free lemon bars

These gluten-free lemon bars are so easy to make! With a buttery shortbread crust and a zesty lemon filling, these bars are a burst of lemon flavor in every bite. They can be prepared in advance, making them a perfect option for any occasion.

Let's make gluten-free lemon bars together! Gather your ingredients.

Add the gluten-free flour, granulated sugar, melted butter, vanilla and salt in a bowl.

Stir until combined. The shortbread mixture will be crumbly.

Pour the shortbread dough into a 8x8-inch baking dish lined with parchment paper.

Use an offset spatula or the bottom of a measuring cup to press the dough into an even layer.

Bake the crust for 25-30 minutes, until the edges are browned and the center is no longer shiny.

In a large bowl, add the granulated sugar, gluten-free flour, lemon juice, lemon zest, and eggs.

Whisk until combined. Be sure not to overmix as it will cause the mixture to froth too much.

Pour the lemon filling over the warm gluten-free shortbread crust.

Bake for 23-28 minutes until the filling is set. Let sit out at room temperature for 1 hour and the refrigerator for 2 hours.

Once chilled, dust the top of the bars with powdered sugar.

Slice the lemon bars into squares, rectangles, or triangles.

Serve and enjoy!
