Slice the chicken breasts in half and pound chicken with a meat mallet until it is 1/3-inch thick. Season with salt and pepper.

Place the gluten-free all-purpose flour, salt, ground black pepper, garlic powder, and Italian seasoning in a shallow bowl and whisk until combined.

Add the eggs to a second bowl. Whisk until combined.

Add the gluten-free breadcrumbs and 1/3 cup of the parmesan cheese to a third bowl, and whisk until combined.

Dip the chicken breast cutlets in the gluten-free flour mixture, making sure to coat all sides. Shake off any excess flour.

Place the flour-coated chicken breast into the egg mixture, and then let any excess egg drip off.
