Soak the wooden skewers in water overnight so they don't burn in the oven.

Cut the onions and bell peppers into 1-inch chunks. Set aside.

Cut the chicken breast into bite sized pieces. Set aside.

Add the avocado oil, lemon juice, parsley, salt, black pepper and garlic powder to a large bowl.

Whisk until combined.

Add the chicken, onions, and bell peppers to the marinade.

Mix until the chicken and vegetables are completely covered in marinade.

Marinate in the refrigerator for at least 1 hour, but 4-6 hours is best.

Alternate the vegetables and chicken on the skewer, making about 12 skewers.

Place on two baking sheets lined with aluminum foil.

Bake in the oven for 25-30 minutes, flipping the skewers about half way through.
