Happy New Year friends! Today marks the first day of 2016 (obviously) and I could not be more excited to see what this new year will bring! As most of you know, I started this blog back in 2010 as a way to share my recipes with my college roommates, friends and sisters. I wasn’t creating my own recipes back then and I definitely was eating a lot of sweet things (though they didn’t necessarily make me feel great). Through that, I found my love of cookie decorating and have posted some of my favorites here with you. I also became deeply passionate about food, recipes and the way food can bring people together. In 2013, I was diagnosed with celiac disease and my blog turned into my gluten-free haven, making all things gluten-free that I wished I could eat. 2014 was the year I decided to take control and figure out why I still felt sick all the time and discovered my intolerances to dairy, yeast, eggs, olives (seriously?) and my candida yeast overgrowth in my gut.
It’s been a rollercoaster, but I think in 2015 I finally found my purpose in blogging. I finally figured out why six years ago I really started this blog. I may not have known it at the time, but I think I started my blog to figure out what my relationship was with food and how to help others who were in the same boat. Needless to say, 2015 was a great year for my blog. I finally was able to start taking my blog seriously, give it the time deserves and truly find my voice.
On a personal level, 2015 was also a year of ups with a few downs for me. We lost someone very dear to us and I miss him everyday. I started a new job (kind of.. I started December 29, 2014 but the first few days don’t count anyways right?). My favorite person moved into my apartment. We celebrated my parent’s 35th anniversary in Hawaii. I did my first Whole 30.. and LOVED it. Michael and I roadtripped to Nashville. I (started to) learn to speak French in my epically long car rides to and from work. I ate a lot of bacon and avocados. I met THE Pioneer Woman. I created a lot of great gluten-free recipes of which I will now conveniently recap for you the BEST of 2015:
1. Bacon Wrapped Chicken Bites with Avocado Dipping Sauce // 2. Sweet Potato Black Bean Quinoa Burger // 3. Baked Purple Sweet Potato Chips // 4. No-Bake Coconut Lemon Squares // 5. Roasted Chicken Thighs // 6. Cilantro Lime Shrimp Salad with Avocado Dressing // 7. Strawberry Jalapeno Salsa // 8. Peach Blueberry Crisp For Two // 9. Mediterranean Chicken Bowls // 10. Rustic Italian Plum Galette // 11. Teriyaki Chicken Wings // 12. Vegan Pumpkin Spice Latte Milkshake // 13. Vegan Pumpkin Cheesecake // 14. 5-Minute Skillet Maple and Cayenne Granola // 15. Savory Bacon and Mashed Potato Waffles
I hope you enjoyed 2015 as much as I did and I’m so glad we were able to share in it together! I appreciate each and everyone one of you for stopping by my little blog and making my day with each and every comment, share and like! It seriously means the world to me! I can’t wait to see what happens in 2016! Bring it on!
I had so much fun writing this best of 2015 post that I did it again in 2017 — see my best of 2017 post!
