For the past month I’ve been taking Wilton cake decorating classes over at Michael’s near my house. The level I am on features decorating flowers out of royal icing and cake design. For three weeks we learned how to make the Wilton rose, violets, primroses, apple blossoms, and daffodils among other skills. My favorite is the rose now that I figured out how to do it. The most important thing I learned in that class is that the consistency of icing is very important. If it’s too soft, the flower will melt and you won’t be able to see its shape. If it’s too stiff, you’ll have a hard time getting the icing out of the parchment bag. We had a wonderful teacher, Karla, who helped us make some awesome cakes. Here are all of the cakes from our last day of class. Mine is the first one pictured above. I’m still working on my skills but I’m extremely excited about what I came up with. I’m starting Level 3, with fondant and gum paste today and very excited to have class with all of these wonderful people for the next month. Let’s see what the rest of my class came up with!
