Cranberry Beet Smoothie

A beautiful ruby red smoothie filled with beets, cranberries, strawberries, spinach and other good for you ingredients!

In just a few short days we’ll start the new year: 2016. Can you believe that? I feel like I’m always saying “Time flies!” but it seriously does. It’s kind of insane. But when the New Year approaches we’ll all be looking at our resolutions for the year to be better versions of ourselves and have the best year yet!

I always like to try to learn something new.. 2014 was the year I (re)learned to play the guitar, 2015 was the year I learned photography, not sure what 2016 will be yet but you will be the first to know, I promise!  

A lot of times at the beginning of the year, we like to make resolutions that revolve around healthy eating and exercising. The smoothie train will definitely be coming once January approaches, but I thought now would ALSO be a great time for a smoothie recipe.

The end of December wraps up most of the holiday parties and sometimes you just need a little detox to get you through to the end of the year. This smoothie is a great way to recharge, detox and power through the end of 2015!

Full of cranberries, strawberries, beets, spinach and more, this smoothie is good for you and tastes great too! The beautiful color comes from the beets which makes it an attractive smoothie ingredient.

But did you know that beets also provide some great nutritional benefits as well? (Of course you did you smartypants!) Beets high in minerals and nutrients, help purify your blood and liver, and may have anti-cancer properties. No wonder they’re in so many smoothie recipes!

Cranberries are the other fun ingredient in this recipe. I have a deep love for fresh cranberries this time of year. They are great in everything from my cranberry jalapeño salsa, to scones (coming soon!) to this cranberry beet smoothie. Such a versatile little fruit!

I love them because they are really low in sugar which is great for people like me trying to keep their sugar consumption down (though they do contain fructose so keep that in mind). Cranberries are also great for preventing UTI’s (somebody had to say it, sorry), high in antioxidants, and are anti-inflammatory.

Needless to say… not only does this smoothie have good looks, it has the nutrients to back it!

Cranberry Beet Smoothie

Ingredients

  • 1 red beet (peeled and cubed)
  • 1/2 cup fresh cranberries
  • 1/2 cup frozen strawberries
  • 1/2 cup spinach
  • 1 banana
  • 1 tablespoon chia seeds
  • 1 tablespoon freshly grated ginger (optional)
  • 1 tablespoon maple syrup (optional)
  • 1 to 1 1/4 cups coconut water (start with one cup and add more if necessary)
  • 4-5 ice cubes

Instructions

  • Add all ingredients to a high powdered blender.
  • Blend 2-3 minutes, until completely processed and blended smooth.
  • Serve immediately.
