Gluten-Free Pita Pizza

This classic gluten-free pita pizza is a great lunch option or an easy weeknight meal. You can even slice it up and serve it as an appetizer! This version is easily made gluten free using a gluten free pita!

If you’re craving pizza but don’t want to go through the effort of rolling out pizza dough, you’re in luck! These easy gluten-free pita pizzas are so easy to make – you can have dinner on the table in under 20 minutes!

Why I love these easy pita pizzas

A pita pizza is exactly what it  sounds like: a pizza on pita bread. This is my go-to meal. Whenever I need a quick dinner or snack this is what I cook up.

It also works great as an appetizer for parties. Just cut it up into small triangles and you have a great party snack.

The options for toppings are absolutely endless. I just use whatever we have in our refrigerator – meats, cheeses, vegetables – but this simple version with marinara and fresh mozzarella with basil is my favorite.

I actually think these pita pizzas would be perfect for a party! You can set out bowls of toppings and let everyone make their own personal pizza with their favorite toppings. Plus, the size of pita bread is the perfect size for a personal pizza!

What makes these pita pizzas gluten-free?

I’ve been making pita pizzas since high school and after my celiac disease diagnosis I thought I wouldn’t be able to eat them again! That is, until I found out gluten-free pita bread exists!

There are a few companies that are producing gluten-free pita bread, but any type of gluten-free flatbread will do. My favorite brand is MyBread Bakery and that’s what I’ve used for this recipe.

Ingredients: gluten-free pita bread, marinara sauce, olive oil, dried basil, dried oregano, fresh mozzarella, fresh basil

How to Make Pita Pizzas

Mix the oil and spices. Add the dried basil and oregano to the olive oil and mix it until the spices are evenly dispersed.

Brush the pita with the oil mixture. Place the pita bread on a baking sheet. Then, use a pastry brush to evenly brush the oil and spice mixture onto the pita bread.

Top with sauce. Spoon some marinara sauce onto the pita bread and spread a thin layer, leaving about 1/2 inch of pita bread along the edges.

Sprinkle with cheese. Place pieces of fresh mozzarella on the pita pizza. Remember, fresh mozzarella melts and spreads very easily so you do not need to cover every inch of the pizza with cheese.

Bake in the oven. Place the pita pizzas in the oven and bake at 400F for 10-15 minutes. I normally start checking the oven at 8 minutes. Depending on the pita bread and cheeses you use, your pita pizza may take more or less time.

Also, if you use frozen pita bread like I typically do, your pita pizza will take longer to bake in the oven. Bake until your pita bread is golden and crispy and the cheese is melted. Remove from the oven and let cool for a few minutes before slicing.

Add more toppings. Don’t stop there. The herbs and spices you add to a pizza after it comes out of the oven is key! Top with fresh basil, sea salt, fresh black pepper, red pepper flakes, and a sprinkle of parmesan cheese. Slice and serve!

FAQs and Tips for Making Pita Pizza

Do I have to use gluten-free pita bread?

No, you don’t! If you aren’t gluten-free, use your favorite pita bread or even naan!

How long does it take to bake pita pizzas?

It will take anywhere from 10-15 minutes. I keep my gluten-free pita in the freezer so it normally takes about 15 minutes for my pizza to get crispy and the cheese to melt. If you use fresh pita, it will be closer to the 10 minute mark. Use the time as a guideline and take the pizza out when the pita is golden brown and the cheese is melted.

Can I make this recipe vegan?

You bet! Use your favorite vegan cheese on top!

Can I store leftover pizza and reheat later?

Yes! I like to keep my leftover pita pizza wrapped in aluminum foil and then I place it on a baking sheet and bake at 400F until the pizza is warm and the cheese is melted.

Do I have to use fresh mozzarella?

No, use whatever cheese you have on hand that will melt well. Shredded mozzarella or an Italian blend work well for this classic version, too.

Ingredients

  • 4 gluten-free pita bread
  • 2 tablespoons olive oil
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 cup marinara sauce
  • 12 oz fresh mozzarella (cubed, about 1 1/2 cups total)

For Topping:

  • fresh basil
  • pinch of sea salt
  • pinch of freshly cracked black pepper
  • pinch of red pepper flakes

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Place pita bread on a baking sheet. You may need 2 baking sheets to fit all 4 pita.
  • In a small bowl, combine olive oil and spices.
  • With a pastry brush spread oil mixture onto the pita bread.
  • Spread marinara sauce on the pita bread, leaving 1/2 inch border along the edges.
  • Add mozzarella cubes to the pita, spacing them out equally.
  • Bake in oven at 400F for 10-15 minutes, or until the edges of the pita bread are brown and the cheese is bubbling. Remove from the oven.
  • Top with basil, salt, pepper, and red pepper flakes. Cool for 2 minutes before cutting with a large knife or pizza cutter.

Notes

  • If you use frozen pita bread, you do not need to thaw it before using. It will take closer to the 15 minutes to bake in the oven. If you use fresh pita bread, start checking at 8 minutes.
