Chocolate Cake Balls

These gluten free chocolate cake balls are such a fun dessert for the holidays! They're great for making with kids, too.

AHH! Cake balls! I stumbled upon Bakerella’s site shortly after I was introduced to the blog world and knew that these cake balls would have to be made immediately.
The great thing about cake balls is that you can mix and match flavors of cake and frosting and always have a different dessert. Now mine do not look as good as hers, but it was a first attempt and I realize that much more practice is needed.
At first when I made these I was a bit nervous that I had put in too much frosting because they were extremely moist. I was not a huge fan of these that day.
However, the next day I decided to try another one and they were soo much better and let me tell you, on the third day even better than the second.
I may try to put a little less frosting next time though to see how they taste. I also had problems finding chocolate bark in my grocery store and was not going to trek all the way to Joann’s or Michael’s in the middle of a blizzard to find candy melts.
So I dealt with what I had and using some baking chocolate and even chocolate chips when I ran out of the baking bars. These works perfectly fine but I will definitely try to find chocolate bark or candy melts next time.

Gluten Free Chocolate Cake Balls

Ingredients

  • 1 gluten free box cake mix (cook as directed on back of the box)
  • 1 can frosting
  • 20 oz chocolate bark
  • 1/4 cup sprinkles, nuts, candies, etc.

Instructions

  • Cook the cake as directed on the back of the box. 
  • Completely cool the cake and then crumble into a large bowl. 
  • Mix in 1 can of vanilla frosting or this vanilla frosting used here.
  • Next, roll the mixture into small balls (about the size of a quarter) and place on a cookie sheet. 
  • Chill for several hours either in the refrigerator or freezer until the balls are firm for easier dipping into the chocolate. 
  • Melt the chocolate in the microwave in a small bowl in 30 second intervals. Mix after each 30 seconds and make sure not to overheat and burn the chocolate. 
  • You may want to melt the chocolate in small doses because it hardens quickly. 
  • Roll the balls in the chocolate and place on wax paper until they harden. 
  • Decorate if you would like before the chocolate firms. Enjoy!
